Oven Not Heating Evenly: Why One Side Burns and the Other Stays Raw
The bottom of the pizza is charred while the top is barely melted, or one side of a sheet pan browns and the other doesn't. You follow the recipe exactly, but the oven seems to have its own rules.
What you’re seeing
- Food browns heavily on one side and stays pale on the other
- Baking takes longer than the recipe says, or finishes too fast
- The oven's set temperature doesn't match an oven thermometer placed inside
- Electric oven shows a visible dark spot on the bake element, or one element glows and the other doesn't
- Long preheat times that never seemed to happen when the oven was new
3 things to check yourself
- Confirm the rack position and pans. Crowding pans wall-to-wall or using dark nonstick pans on the lowest rack blocks and redirects heat — give hot air room to circulate.
- Check the bake element (electric ovens). With the oven off and cool, look at the bottom element for blisters, cracks, or sections that stay dark during preheat.
- Test with an oven thermometer. Set 350°F, wait 20 minutes past preheat, and read the thermometer — a consistent 50°F+ offset points at a calibration or sensor issue.
